My California roots often inspire me to create dishes that tessellate health-conscious ingredients and easy preparation methods. Like the vibrant, sun-kissed valleys of my home, this dish is fresh, colorful, and brimming with invigorating flavors. Plus, the combination of herbs brings a pinch of classic American oomph, reminiscent of a heart-warming bowl of chowder or the traditional clam bakes served along the coast.

What You’ll Need

  • 1 lb white fish fillets
  • 2 eggs
  • 1/2 cup breadcrumbs
  • 2 garlic cloves, minced
  • 3 tablespoons finely chopped fresh parsley
  • 2 tablespoons finely chopped fresh chives
  • 1 tablespoon finely chopped fresh dill
  • 1 tablespoon finely chopped fresh thyme
  • Salt to taste
  • Pepper to taste
  • 1/2 cup all-purpose flour, for rolling
  • 3 tablespoons olive oil
  • 1 lemon, cut into wedges
ALLERGENS: Fish, eggs, gluten, wheat

Method

Step One

First, you will need to pulse the white fish fillets in a food processor until they are minced. Be careful not to overdo it – you want to maintain some texture.

Step Two

In a bowl, beat the two eggs. Then, combine the minced fish, breadcrumbs, minced garlic, the finely chopped parsley, chives, dill, thyme, and the beaten eggs. Season with salt and pepper to taste. Mix well until everything is fully incorporated.

Step Three

Using your hands, shape the mixture into balls about the size of a ping pong ball and roll them in the all-purpose flour, covering all sides evenly. This would make them crispier when fried.

Step Four

Heat the olive oil in a large frying pan over medium heat. Add the fish balls to the pan, being careful not to overcrowd it. You may need to do this in batches. Cook the fish balls until they are golden brown and crispy on all sides, about 4-5 minutes per side.

Step Five

Remove the fish balls from the pan and drain on a paper towel to remove excess oil. Serve them hot with lemon wedges on the side for squeezing.
