What You’ll Need

  • 3 lbs boneless center cut pork loin
  • 1/4 cup olive oil
  • 8 cloves of garlic, minced
  • 2 tablespoons rosemary, finely chopped
  • 2 tablespoons sage, finely chopped
  • 1 tablespoon thyme, finely chopped
  • 1 tablespoon lemon zest
  • 2 teaspoons salt
  • 1 teaspoon freshly ground black pepper
  • 1 cup white wine
  • 1/4 cup fresh lemon juice

Method

Step One

Preheat your oven to 375 degrees Fahrenheit.

Step Two

While your oven is preheating, combine the olive oil, minced garlic, rosemary, sage, thyme, lemon zest, salt, and pepper in a small bowl. Mix these ingredients together until they form a paste.

Step Three

Take your pork loin and pat it dry using paper towels. Once it’s dry, rub the paste you made in step two all over the pork loin. Make sure it’s fully coated.

Step Four

Place your pork loin on a rack in a roasting pan. Pour the white wine and fresh lemon juice into the base of the pan.

Step Five

Roast your pork loin in the oven for about 20 minutes. Then reduce the temperature to 350 degrees Fahrenheit and continue to roast for an additional 60-80 minutes. You should roast your pork until the internal temperature reaches 145 degrees Fahrenheit.

Step Six

Once your pork is cooked, remove it from the oven and let it rest for about 10-15 minutes before carving. This will help to keep the juices in the pork, making it juicer and more flavorful.
