What You’ll Need

  • 1 cup of warm water (110°F)
  • 2 ¼ teaspoons of active dry yeast
  • 1 teaspoon of granulated sugar
  • 3 cups of bread flour
  • 1 tablespoon of olive oil
  • 1 tablespoon of malt powder OR 2 teaspoons of granulated sugar
  • 1 ½ teaspoons of salt
  • Cornmeal for dusting
  • 1 egg white mixed with 1 tablespoon of water for glazing

Method

Step One

Pour the warm water into a large bowl, and then stir in the active dry yeast and sugar. Leave it undisturbed for about 5-6 minutes until it becomes frothy.

Step Two

Add 2 cups of bread flour to the yeast mixture along with the olive oil, malt powder or granulated sugar, and salt. Stir until well mixed.

Step Three

Gradually add the remaining 1 cup of bread flour to the dough, stirring continuously until it comes together in a rough ball. Continue to knead the dough in the bowl for about 7-8 minutes until it becomes elastic and smooth.

Step Four

Place the dough in a greased bowl and cover with a cloth. Set it in a warm area and allow it to rise until it doubles in size. This should take about 1-½ hours.

After the dough has risen, punch it down and turn it out onto a lightly floured surface. Shape the dough into a large loaf, and then cut into individual hoagie rolls.

Place the rolls onto a baking sheet that has been sprinkled with cornmeal. Let them rise again for about an hour.
