What You’ll Need
- 4 cups of Dark Rum
- 1 1/2 cups of Brown Sugar
- 2 Vanilla Beans
- 6 Whole Cloves
- 4 Cinnamon Sticks
- 4 Orange Peels
- 2 Lemon Peels
- 8 Whole Allspice Berries
- 1/4 teaspoon of Nutmeg
- 4 pieces of Star Anise
Method
Step One
Pour the 4 cups of dark rum into a large glass jar that can be sealed tightly.
Step Two
Add the 1 1/2 cups of brown sugar into the jar and stir until the sugar is completely dissolved in the rum.
Step Three
Split the 2 vanilla beans lengthwise and scrap out the seeds. Add the seeds and the split beans into the jar.
Step Four
Add the 6 whole cloves, 4 cinnamon sticks, 4 orange peels, 2 lemon peels, 8 whole allspice berries, 1/4 teaspoon of nutmeg, and 4 pieces of star anise into the jar.
Step Five
Seal the jar tightly and shake well to mix all the ingredients together.
Step Six
Store the jar in a cool, dark place for at least 2 weeks, shaking the jar every few days to mix the spices and rum.
Step Seven
After the 2 weeks, strain the rum through a fine mesh sieve or cheesecloth into a new bottle or jar, discarding the spices.
