What You’ll Need
- 3 pounds of lamb leg
- 1 cup of honey
- 2 tablespoons of extra virgin olive oil
- 6 cloves of garlic, minced
- 2 tablespoons of fresh rosemary, chopped
- 2 tablespoons of fresh thyme, chopped
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 2 tablespoons of Spanish sherry vinegar
- 1 cup of dry white wine
- 2 bay leaves
Method
Step One
First, you will need to preheat your oven to 375 degrees Fahrenheit. While the oven is preheating, you can begin to prepare your lamb leg by rubbing it down with extra virgin olive oil. This will help to keep the lamb moist during the cooking process.
Step Two
After the lamb leg is coated with oil, sprinkle over the minced garlic, chopped fresh rosemary, chopped fresh thyme, salt, and black pepper. Rub these ingredients into the meat to ensure they distribute evenly.
Step Three
Now, it’s time to make the honey glaze. Combine the honey and Spanish sherry vinegar in a small saucepan over medium heat. Stir the mixture until it warms up and becomes a bit thicker, then remove it from the heat.
