What You’ll Need
- 2 cups of horse gram
- 6 cups of water
- 3 tablespoons of vegetable oil
- 1 large onion, finely chopped
- 2 cloves of garlic, minced
- 1 inch piece of ginger, minced
- 2 green chilies, chopped
- 1 tablespoon of curry powder
- 1/2 teaspoon of turmeric powder
- 1 large bell pepper, chopped
- 2 large carrots, chopped
- 1 cup of green peas
- 2 cups of chopped spinach
- 1 large tomato, chopped
- 1 bunch of cilantro, chopped
- Salt, to taste
- 2 tablespoons of lemon juice
Method
Step One
Start by rinsing the horse gram thoroughly under running water. Afterwards, place it in a bowl, add 6 cups of water and let it soak overnight.
Step Two
The next day, drain the water from the horse gram. Put it into a large pot, add new water and bring to a boil. Maintain a simmer for about one to two hours or until the horse gram is tender. Most of the water should be absorbed by now.
Step Three
As the horse gram cooks, you can start preparing the curry. Begin by heating up the vegetable oil in a large pan over medium heat. Once hot, add the chopped onion. Sauté until it turns translucent and aromatic. Next, add the minced garlic, ginger and chopped green chilies and mix well.
Step Four
Add the curry powder and turmeric powder to the pan. Stir well to mix them with the other ingredients.

Add the chopped bell pepper and carrots to the pan. Continue sautéing until the vegetables start to soften.
