Nutrition and Health Benefits

The humble cod is not just a protein powerhouse, but also a great source of vitamin B12 and iodine alongside other beneficial nutrients. However, when cooked with horseradish and dill, it takes on more layers of health benefits. Horseradish, popular for its pungent flavor, also boasts several health advantages. It helps alleviate respiratory discomfort and enhance our body’s art of digestion. Similarly, dill, the gentle aromatic herb, lends the dish not just flavor, but also aids in digestion, reducing swelling and enhancing our immune system.

This recipe of Horseradish and Dill Baked Cod reminds me of a lighter version of classic Fish and Chips. It has the crunch, the flaky fish, and an elevated flavor palette. It can be served with a fresh side salad, a portion of sweet potato fries or even a creamy risotto. Regardless of the accompaniment, this dish promises to take you on a refreshing journey to the heart of New England’s coastal cuisine.

What You’ll Need

  • 6 cod fillets
  • 3 tablespoons of horseradish
  • 3 tablespoons of fresh dill, chopped
  • 2 lemons, juiced
  • Salt to taste
  • Pepper to taste
  • 3 tablespoons of olive oil
ALLERGENS: Fish

Method

Step One

Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). While waiting, line a baking sheet with parchment paper to get it ready for the fillets.

Step Two

Rinse the cod fillets under cool water and pat them dry with paper towels. Carefully place the fillets on the prepared baking sheet.

Step Three

In a small bowl, combine the horseradish, fresh dill, lemon juice, salt, and pepper. Stir vigorously to ensure that all the ingredients are properly blended.

Step Four

Drizzle each cod fillet with olive oil. Afterwards, evenly spread the horseradish and dill mixture on each fillet. Use a basting brush if necessary to ensure each fillet is fully coated.

Step Five

Place the baking sheet in the preheated oven. Bake the cod for about 15 to 20 minutes, or until the fish flakes easily with a fork and appears opaque all the way through.

Step Six

Once cooked to your liking, remove the cod from the oven. Allow it to rest for a few minutes before serving. Enjoy your horseradish and dill baked cod with your favourite sides!
