What You’ll Need

  • 2 lbs boneless, skinless chicken breasts
  • 1 cup prepared horseradish
  • 1/4 cup light mayonnaise
  • 1/2 cup Greek yogurt
  • 1 tablespoon Dijon mustard
  • 2 tablespoons lemon juice
  • 2 cups red grapes, halved
  • 1 apple, finely chopped
  • 1/2 cup dried cranberries
  • 1/2 cup chopped walnuts
  • Salt and black pepper to taste
  • 6 cups fresh mixed salad greens

Method

Step One

Season the boneless, skinless chicken breasts with salt and black pepper to taste. Cook them in a skillet over medium heat until browned and cooked through, usually 10-12 minutes each side. Once done, remove from heat and let them cool.

Step Two

While waiting for your chicken to cool, you can prepare the salad dressing. In a large bowl, combine 1 cup of prepared horseradish, 1/4 cup of light mayonnaise, 1/2 cup of Greek yogurt, 1 tablespoon of Dijon mustard, and 2 tablespoons of lemon juice. Step Three
