As with every aroma that wafts out from my kitchen, there’s a story and memory attached to each one, and the Horseradish Coleslaw saga is no less enticing. What You’ll Need

  • 1/2 head of green cabbage, finely shredded
  • 1/2 head of red cabbage, finely shredded
  • 2 large carrots, finely shredded
  • 1 red onion, thinly sliced
  • 1 Granny Smith apple, cored and finely sliced
  • 1/2 cup of red radishes, thinly sliced
  • 1/3 cup of white sugar
  • 1/2 teaspoon of salt
  • 1/8 teaspoon of pepper
  • 1/4 cup of milk
  • 1/2 cup of mayonnaise
  • 1/4 cup of buttermilk
  • 1 1/2 tablespoons of white vinegar
  • 2 1/2 tablespoons of lemon juice
  • 1 tablespoon of Dijon mustard
  • 1 tablespoon of prepared horseradish
  • 2 tablespoons of finely chopped fresh parsley
ALLERGENS: milk, mayonnaise, buttermilk

Method

Step One

The first step involves preparation of the vegetables and apple. Finely shred the red and green cabbages & the carrots. Next, thinly slice the red onion, red radishes and the Granny Smith apple. Remember to core the apple first before slicing.

Step Two

Combine the shredded cabbages, carrots, sliced onion, apple, and radishes in a large salad bowl. Toss the ingredients together until they are well-mixed.

Step Three

Next, in a separate smaller bowl, combine the dry ingredients: white sugar, salt, and pepper.

Step Four

Now, add the wet ingredients to the mixture of dry ingredients: pour in the milk, mayonnaise, buttermilk, white vinegar and lemon juice. Add the Dijon mustard and prepared horseradish to this mixture.

Step Five

Mix these ingredients together until they form a smooth and creamy sauce.

Step Six

Pour the creamy sauce over the cabbage and other ingredients in the salad bowl.

Step Seven

Toss the coleslaw mix with the sauce until all the ingredients are well-coated.

Step Eight

Once this is done, garnish the coleslaw with the finely chopped fresh parsley. Your horseradish coleslaw is now ready to serve. Enjoy!
