What You’ll Need

  • 1 cup sour cream
  • 1/4 cup grated fresh horseradish
  • 1 tablespoon Dijon mustard
  • 1 teaspoon white wine vinegar
  • 1 tablespoon chopped fresh chives
  • Salt to taste
  • Ground black pepper to taste
  • 1 prime rib roast (4 to 5 pounds), to serve with the sauce

Method

Step One

Prepare all the ingredients by measuring out the sour cream, grating the fresh horseradish, chopping the fresh chives, and gathering your Dijon mustard, white wine vinegar, plus your salt and pepper.

Step Two

In a bowl, combine the 1 cup sour cream, 1/4 cup fresh horseradish, 1 tablespoon Dijon mustard, and 1 teaspoon white wine vinegar.

Step Three

Stir the sauce well until all the ingredients are fully incorporated.

Step Four

Add the 1 tablespoon of chopped fresh chives to the mixture. Stir once again.

Step Five

Season the sauce to taste with salt and ground black pepper. Stir well.

Step Six

Allow the horseradish cream sauce to sit for at least an hour in the refrigerator. This allows the flavors to meld together.

Step Seven

When ready to serve, slice the prime rib roast and serve each portion with a dollop of the homemade horseradish cream sauce. Enjoy!
