What You’ll Need

  • 2 pounds Russet potatoes
  • 1/2 cup unsalted butter
  • 1 cup heavy cream
  • 1/4 cup horseradish
  • Salt to taste
  • Pepper to taste
  • 1/4 cup chives, finely chopped
ALLERGENS: Milk

Method

Step One

Start off by thoroughly washing and peeling 2 pounds of Russet potatoes. Once peeled, cut them into approximately 1 inch pieces.

Step Two

Place the cut potatoes into a large pot and cover with water. Over high heat, bring the water to a rolling boil. Cook the potatoes until they become tender, which should take about 15-20 minutes.

Step Three

As the potatoes are cooking, combine 1/2 cup of unsalted butter and 1 cup of heavy cream in a small saucepan. Cook this over a medium heat until the butter is completely melted and the mixture is moderately heated. Be sure to stir it occasionally.

Step Four

Once the potatoes are cooked and tender, drain them well. Return the potatoes back to the pot they were original cooked in.

Step Five

Add the heated cream and butter mixture to the pot of drained potatoes. Also, add in 1/4 cup of horseradish. Mash the potatoes until they reach your desired consistency.

Step Six

Season the mashed potatoes to taste with salt and pepper. Once they are seasoned to your liking, stir in 1/4 cup of finely chopped chives.

Step Seven

Once everything is mixed in well, your horseradish mashed potatoes are ready to be served. Enjoy!
