Why I Love Turkish Kraker

One recipe that has been a recent favorite in my kitchen is undeniably the Turkish classic called ‘Kraker’. It’s interesting how sometimes the simplest ingredients can yield the most flavorful creations – a testament to the culinary wisdom of the Turks. This homemade Kraker recipe is as unpretentious as it is delicious, its crunchiness being a delightful surprise to the palate with each bite.

Conjuring Up This Turkish Delight

Being someone who upholds a West Coast health-conscious approach in the kitchen, I find this recipe aligns perfectly with that ethos. Despite being a classic indulgence, the Kraker recipe embodies what I adore about the Turkish cuisine – the commitment to natural, wholesome ingredients, none of which are over-processed or laden with unhealthy additives. As a chef, I’m continually inspired by the philosophies of people like Chef Musa Şengül, who are advocates for returning to the culinary roots of their culture. In essence, eating less from a box and more from the Earth.

The Versatility of the Kraker

This recipe is not only satiating as a stand-alone snack but also accompanies well with other traditional Middle Eastern cuisines. Imagine enjoying it with a bowl of fresh, colorful Tabbouleh salad or as a tasty scooper for some creamy Baba Ganoush. Anyone else’s taste buds starting to dance?

The joy of food lies in the shared experiences it creates. One of the things I love about introducing dishes like the Kraker into my kitchen is the excitement it stirs in my three adoptive children – the harmony of cultures through the common language of food. Experimenting with dishes like these not only diversifies our meals but also helps cultivate an understanding and appreciation of other people’s gastronomy.

So next time you’re scrolling, searching for your next culinary adventure, let this Kraker recipe swoop in and whisk you away on a Middle Eastern escapade- a taste trail you definitely won’t regret treading!

What You’ll Need

  • 4 cups of All-Purpose Flour
  • 2 teaspoons of Salt
  • 1.5 tablespoons of Sugar
  • 1 cup of Warm Water
  • 2 tablespoons of Dry Yeast
  • 4 tablespoons of Olive Oil
  • 1 Egg (for glazing)
  • 2 tablespoons of Sesame Seeds
ALLERGENS: Wheat, Gluten, Yeast, Egg, Sesame

Method

Step One

Begin by mixing your dry ingredients. In a large bowl, combine 4 cups of All-Purpose Flour, 2 teaspoons of Salt, and 1.5 tablespoons of Sugar. Make sure all these ingredients are evenly mixed.

Step Two

In a small bowl, mix together 1 cup of warm water and 2 tablespoons of Dry Yeast. Let it sit for about 10 minutes, or until the mixture is frothy.

Step Three

Pour the Yeast mixture into the large bowl with the dry ingredients, then add 4 tablespoons of Olive Oil. Mix well, either by hand or with a mixer, until it forms a soft dough. Add more flour if needed.

Step Four

Transfer the dough onto a floured surface and knead it for about 5 minutes, until it’s smooth and elastic. Place the dough back into the bowl and cover it with a damp cloth. Let it rise for 1 – 2 hours or until it doubles in size.

Step Five

Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius) and line a baking sheet with parchment paper. Once the dough has risen, punch it down and divide it into equal portions. Roll each portion into a ball and flatten it with a rolling pin to form a cracker shape. Place each cracker onto the baking sheet.

Step Six

Beat 1 egg and use it to glaze the top of each cracker. Sprinkle 2 tablespoons of Sesame Seeds over the top of the crackers.

Step Seven

Bake in the preheated oven for 15 – 20 minutes, or until the crackers are golden brown. Allow them to cool on a wire rack before serving.
