What You’ll Need
- 1.5 cups of dried hyacinth beans
- 6 cups of water
- 2 cups mixed berries (like strawberries, blueberries and raspberries)
- 1 large apple – peeled, cored and chopped
- 1 large banana – peeled and sliced
- 1 cup of chopped pineapple
- 1/2 cup of orange juice
- 1 tablespoon of lemon juice
- 1/2 cup of honey
- 1 cup of granulated sugar
- 1 tablespoon of vanilla extract
- A dash of salt
Method
Step One
Begin by taking your dried hyacinth beans and soaking them overnight. This step is important as it helps in softening the beans, making them easier to cook the next day.
Step Two
In a large pot, add 6 cups of water and the pre-soaked hyacinth beans. Bring it to a simmer and let it cook until the beans are tender. This may take approximately 1-2 hours. Be sure to stir occasionally and add more water if needed.
Step Three
While the beans are cooking, prepare your fruit. Wash the mixed berries, peel and chop the apple, peel and slice the banana, and chop the pineapple. Keep these aside until needed.
