What You’ll Need

  • 2 cups of jambul fruit, pitted and sliced
  • 1 cup of diced mango
  • 1 cup of sliced strawberries
  • 1 cup of blueberries
  • 1 cup of diced pineapple
  • 1/2 cup of shredded coconut
  • 1 tablespoon of freshly squeezed lemon juice
  • 1 tablespoon of powdered sugar
  • Handful of fresh mint leaves, for garnish
ALLERGENS: Mango, Strawberries, Blueberries, Pineapple, Coconut

Method

Step One

Begin by preparing the fruit. Pit and slice the jambul fruit, dice the mango and pineapple, and slice the strawberries.

Step Two

Combine all of the prepared fruit in a large bowl. This includes the jambul fruit, mango, strawberries, blueberries, and pineapple.

Step Three

In a small bowl, combine the freshly squeezed lemon juice and the powdered sugar. Stir until the sugar is fully dissolved.

Step Four

Pour the lemon juice and sugar mixture over the fruit in the large bowl. Toss gently to ensure that all pieces of fruit are coated in the mixture.

Step Five

Sprinkle the shredded coconut over the top of the fruit.

Step Six

Toss the fruit and coconut together until the coconut is evenly distributed.

Step Seven

Refrigerate the salad for at least one hour before serving to allow the flavors to meld together.

Step Eight
