What You’ll Need

  • 2 cups whole milk
  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 1 tablespoon jasmine tea leaves
  • 6 large egg yolks
  • 1 cup chopped fresh fruit of your choice
  • 4 teaspoons pure vanilla extract

Method

Step One

First, combine the whole milk and heavy cream in a saucepan. Stir them together over medium heat. Keep stirring until the mixture starts to simmer, then remove the saucepan from the heat.

Step Two

Next, add the jasmine tea leaves to the hot milk mixture. Allow the tea leaves to steep in the milk for about 10 minutes. Strain the milk to remove the tea leaves, then return the milk mixture to the saucepan.

Step Three

In a separate bowl, whisk together the sugar and egg yolks until they become pale yellow and thick. This process should take about 2 minutes.

Step Four

Slowly pour the hot milk mixture into the egg yolk mixture, whisking constantly to prevent the eggs from cooking. Pour this mixture back into the saucepan and stir it over low heat until it thickens slightly and coats the back of a spoon.
