What You’ll Need

  • 2 tablespoons of Jimbu (Nepalese herb)
  • 16 ounces of dried egg noodles
  • 2 tablespoons of vegetable oil
  • 2 cloves of garlic, minced
  • 1 tablespoon of minced ginger
  • 1 small onion, thinly sliced
  • 1 large bell pepper, thinly sliced
  • 2 medium carrots, peeled and thinly sliced
  • 2 cups of broccoli florets
  • 1 cup of snow peas, trimmed
  • 1 cup of sliced mushrooms
  • 2 tablespoons of soy sauce
  • 2 tablespoons of oyster sauce
  • 1 tablespoon of sesame oil
  • 1 tablespoon of sugar
  • 1 teaspoon of red pepper flakes
  • 1 cup of mixed fresh fruits (apples, grapes, blueberries, etc.)
  • Salt and black pepper to taste

Method

Step One

Bring a large pot of water to a boil. Once boiling, add the dried egg noodles and cook according to the package instructions until al dente. Drain the noodles and set them aside.

Step Two

In a large frying pan or wok, heat the vegetable oil over medium heat. Add the Jimbu and let it fry until it turns a darker shade, being careful not to burn it.

Step Three

Add the minced garlic and ginger to the pan and sauté until fragrant, about 30 seconds to a minute. Next, add the thinly sliced onion, bell pepper, and carrots. Stir-fry for about 2-3 minutes, until the vegetables start to soften.

Step Four

Add the broccoli florets, snow peas, and sliced mushrooms to the pan. Continue stir-frying for another 3-4 minutes, until all the vegetables are tender-crisp.

Step Five

In a separate bowl, mix together the soy sauce, oyster sauce, sesame oil, sugar, and red pepper flakes. Pour this sauce mixture into the pan with the vegetables and toss everything together to combine.

Step Six

Add the cooked and drained egg noodles to the pan. Toss everything together, ensuring that the noodles and vegetables are evenly coated with the sauce. Season with salt and black pepper to taste.

Step Seven

Remove the pan from heat and top the stir-fried noodles with the mixed fresh fruits. The fruits will add a refreshing burst of sweet and tangy flavors to counterbalance the savory noodles.

Step Eight
