What You’ll Need

  • 2 whole ducks (about 4-5 pounds each)
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons black pepper
  • 1 tablespoon olive oil
  • 1/2 cup balsamic vinegar
  • 1/2 cup red wine
  • 1/2 cup chicken broth
  • 1/4 cup juniper berries, crushed
  • 1/4 cup honey
  • 3 tablespoons brown sugar
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh thyme, chopped
  • 1 orange, sliced
  • 1 apple, sliced

Method

Step One

Preheat your oven to 350°F (175°C). Rinse the ducks thoroughly under cold water and pat them dry with paper towels.

Step Two

Season the ducks inside and out with 1 1/2 teaspoons of salt and 1 1/2 teaspoons of black pepper. Stuff the cavities with the orange and apple slices.

Step Three

In a large roasting pan, place the ducks breast-side up. Brush the ducks with 1 tablespoon of olive oil.

Step Four

Roast the ducks in the preheated oven for about 1 1/2 hours, or until the skin is crispy and the internal temperature of the ducks reaches 165°F (74°C). Baste occasionally with their drippings.

Step Five

While the ducks are roasting, prepare the glaze. In a medium saucepan, combine 1/2 cup of balsamic vinegar, 1/2 cup of red wine, 1/2 cup of chicken broth, 1/4 cup of crushed juniper berries, 1/4 cup of honey, 3 tablespoons of brown sugar, and 2 tablespoons of soy sauce.

Step Six

Add 2 cloves of minced garlic, 1 teaspoon of chopped fresh rosemary, and 1 teaspoon of chopped fresh thyme to the glaze mixture. Bring the sauce to a boil over medium heat, then reduce the heat to low and simmer for about 15-20 minutes, or until the glaze is reduced and slightly thickened.

Step Seven

During the last 30 minutes of roasting, begin brushing the ducks with the glaze every 10 minutes until they are beautifully caramelized.

Step Eight

Remove the ducks from the oven and let them rest for about 10 minutes before carving. Serve the Juniper Berry Glazed Duck with the remaining glaze drizzled over the top or on the side. Enjoy!
