Why I Love Turkish Kadınbudu Köfte

I’d love to introduce you to a gem of Turkish gastronomy known as Kadınbudu Köfte, a recipe that truly captures the joy of a culinary journey. In my kitchen, spices from the west of Africa merge with Southern comfort, creating unique recipes that transcend continents and cultures. Yet, it’s the exploration of other global cuisines, like Turkish food, that keeps me inspired and my kitchen vibrant.

Delicious Kadınbudu Köfte

The Magic of Kadınbudu Köfte

What I love about Kadınbudu Köfte is its story, which hints at the values of hospitality and warmth woven into Turkish culture. Roughly translated as ‘Lady’s Thigh’, this delightful ground beef and rice dish carries a dash of mystery and playfulness. Each bite is a perfect balance of comforting flavours, gently held together by the delicate crunch of its flour-egg coating.

This dish’s charm is evocative of the works of chef Ceyda Koc, who’s renowned for her modern interpretations of traditional Turkish cuisine. Just like Ceyda, I appreciate traditional recipes, but I always look for creative ways to sprinkle in a bit of my own Afro-Southern heritage.

Kadınbudu Köfte: A Versatile Marvel

Kadınbudu Köfte is a recipe that gives you room to experiment. Whether it’s your choice of ground meat, the spices you use, or the accompaniments you serve it with, you have an open canvas to infuse your personal touch. Pair it with a caramelized onion pilaf or a refreshing salad sprinkled with sumac and pomegranate molasses, and your dinner guests are in for a hearty treat.

If you’re fond of dishes like Nigerian meat pies or even Southern meatloaf, you’d appreciate how Kadınbudu Köfte straddles both worlds effortlessly, blending the comfort of a meat-and-rice combination with the delightful surprise of a crispy outer shell.

Irrespective of our roots, aren’t we all, after all, on the lookout for food that both comforts and excites us?

What You’ll Need

  • 1.5 pounds of ground beef
  • 1 cup of rice
  • 1 medium-sized onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of black pepper
  • 1 teaspoon of salt
  • 1/2 teaspoon of ground cumin
  • 3 large eggs
  • 1 cup of all-purpose flour
  • 1/4 cup of olive oil
ALLERGENS: Ground beef, rice, onion, garlic, eggs, all-purpose flour

Method

Step One

Firstly, cook the rice in a rice cooker or on the stovetop. When the rice is cooked and ready, set it aside to cool down.

Step Two

In a large bowl, mix the ground beef, chopped onion, minced garlic, black pepper, salt, and ground cumin. Stir until the ingredients are well combined.

Step Three

Add the cooked rice to the beef mixture. Mix together until evenly distributed.

Step Four

Form mixture into oval-shaped patties. Set these aside.

Step Five

In a separate bowl, beat all 3 eggs. In another bowl, place the all-purpose flour.

Step Six

Dip each patty first into the egg mixture, then coat with the flour. Repeat this process for all patties.

Step Seven

Heat the olive oil in a large skillet over medium heat. Cook the patties in batches, ensuring not to overcrowd the skillet. Cook each side until golden brown, which should take approximately 5 to 7 minutes per side. Repeat this process until all patties are cooked.

Step Eight

Once all the patties are cooked and golden brown, they are ready to serve. Enjoy your delicious Kadınbudu Köfte hot!
