What You’ll Need

  • 2 1/2 cups whole milk
  • 1 1/2 cups heavy cream
  • 3/4 cup sugar
  • 8 fresh kaffir lime leaves, torn
  • 6 large egg yolks
  • 1/4 cup fresh lime juice
  • 1 tablespoon kaffir lime zest

Method

Step One

Pour 2 1/2 cups of whole milk, 1 1/2 cups of heavy cream, and 3/4 cup of sugar into a saucepan. Heat the mixture over medium heat, stirring constantly until the sugar has dissolved completely.
