What You’ll Need

  • 3 lbs Lamb Shoulder
  • 2 tablespoons Kala Zeera (Black Cumin)
  • 1 tablespoon Turmeric Powder
  • 2 tablespoons Olive Oil
  • Salt to taste
  • Pepper to taste
  • 4 cloves Garlic, minced
  • 1 tablespoon Ginger, grated
  • 1 large Onion, finely chopped
  • 1/2 cup Fresh Mint Leaves, finely chopped
  • 1/2 cup Fresh Cilantro Leaves, finely chopped
  • 2 tablespoons Lemon Juice
  • 1 cup Greek Yogurt
  • 1/2 cup Water
  • 2 large Apples, diced
  • 1 large Pear, diced

Method

Step One

In a small bowl, combine the Kala Zeera, turmeric powder, salt, and pepper. Mix the spices together in the bowl until evenly distributed.

Step Two

Spread olive oil over the lamb shoulder and rub it in using your hands. Once the lamb is well-coated in oil, sprinkle over the spice mix, ensuring the meat is evenly coated.

Step Three

Preheat your oven to 325 degrees Fahrenheit (165 degrees Celsius). Allow the lamb to absorb the spice mix while the oven heats up.

Step Four

In a large pot, sauté the minced garlic, grated ginger, and finely chopped onion in some olive oil over medium heat. Cook until the onions are translucent and the mixture is fragrant.

Step Five

Add the spiced lamb shoulder to the pot. Sear each side for about 2-3 minutes until browned.

Step Six

Pour 1/2 cup of water into the pot. Cover the pot and transfer it to the preheated oven. Cook for 1.5 hours before adding the diced apples and pear.

Step Eight

Return the pot to the oven and cook for an additional 1-1.5 hours, or until the lamb is tender and cooked through.
