What You’ll Need

  • 3 cups of Kapas-kapas (pomelos), peeled and segmented
  • 1.5 cups of fresh coconut milk
  • 1 large red onion, finely chopped
  • 3 cloves of garlic, minced
  • 2 green chili peppers, finely sliced
  • 1 teaspoon of turmeric powder
  • 1.5 tablespoons of curry powder
  • 4 tablespoons of vegetable oil
  • Salt to taste
  • 1 bunch of fresh cilantro, finely chopped for garnish
ALLERGENS: Pomelos, coconut, onion, garlic, chili peppers, turmeric, cilantro

Method

Step One

Start by heating the vegetable oil in a large pot over medium heat. Once hot, add the finely chopped red onion and minced garlic to the pot. Saute these ingredients until they are soft and fragrant.

Step Two

Next, add the finely sliced green chili peppers to the pot. Also, add the turmeric powder and curry powder. Stir everything together and allow these to cook for about 2 minutes.

Step Three

Add the peeled and segmented kapas-kapas (pomelos) into the pot. Stir to combine it with the other ingredients and allow it to cook for about 5-7 minutes. This can help the kapas-kapas to absorb the flavors of the spices.

Step Four

After that, pour the fresh coconut milk into the pot. Stir and mix well until everything is evenly combined. Adjust the heat to low, cover the pot and let it simmer for about 10-15 minutes.

Step Five

Taste your curry and season with salt according to your preference. If it’s too spicy, you can also add a little more coconut milk.

Step Six

Lastly, garnish your Kapas-kapas and coconut milk curry with the finely chopped fresh cilantro before serving. Enjoy it while it’s hot, perhaps with some warm rice on the side.
