What You’ll Need

  • 2 lbs prawns, de-shelled and de-veined
  • 5 pieces of Kudampuli (Garcinia Cambogia)
  • 1 tablespoon turmeric powder
  • 2 tablespoons red chili powder
  • 1 tablespoon black pepper
  • 1 tablespoon fennel powder
  • 1 tablespoon coriander powder
  • 1 tablespoon ginger garlic paste
  • 2 cups chopped onions
  • 1 cup chopped tomato
  • 2 green chilies, slit
  • 2 springs of curry leaves
  • 2 tablespoons coconut oil
  • Salt to taste
  • Water as needed
ALLERGENS: Prawns, Garcinia Cambogia, Black pepper, Coconut oil

Method

Step One

First, soak the Kudampuli in a half cup of water and set it aside. Take the prawns and marinate them using half of the turmeric powder, red chili powder, and salt. Keep it aside for 15-20 minutes so that the flavors can seep into the prawns.

Step Two

Then, take a saucepan and heat the coconut oil. Into this, add the chopped onions, green chilies, and curry leaves. Sauté until the onions become golden brown.

Step Three

Once the onions are done, add the ginger garlic paste and sauté until the raw smell disappears. Next, add the chopped tomatoes and sauté until they become mushy and well cooked.

Step Four

At this point, add the remaining turmeric powder, red chili powder, black pepper, coriander powder and fennel powder. Sauté this until the raw smell of the spices disappears. You can add a little water to prevent the spices from burning.

Step Five

Next, add the soaked Kudampuli along with the water into the pan. Once it comes to boil, add the marinated prawns and let it cook for 10-15 minutes or until the prawns are cooked properly.

Step Six

After the prawns are cooked, increase the heat and let the water evaporate until you get your desired consistency. Your Kerala style prawn roast with Kudampuli is ready to be served. You can garnish it with a sprig of curry leaves for enhanced flavor.
