What You’ll Need

  • 1 large Kerguelen cabbage or regular cabbage, chopped
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium carot, chopped
  • 1 medium potato, chopped
  • 6 cups vegetable broth
  • 1 large apple, cored and chopped
  • 1 cup orange juice
  • Salt to taste
  • Pepper to taste
  • Chopped parsley for garnish

Method

Step One

In a large pot, heat the olive oil over medium heat. Once the oil is hot, add the chopped onion and sauté until it becomes translucent.

Step Two

Next, add in the minced garlic and cook for about one minute more until it becomes fragrant. Be careful not to burn the garlic.

Step Three

You can now add the chopped Kerguelen cabbage, carrot, and potato to your pot. Stir the ingredients together and let them simmer for about 5 minutes until they start to become tender.
