What You’ll Need
- 2 pounds pork shoulder
- 1 cup lemongrass, finely chopped
- 6 kinh gioi leaves, finely chopped
- 4 garlic cloves, minced
- 2 red chili peppers, finely chopped
- 1 tablespoon sugar
- 2 tablespoons fish sauce
- 1 tablespoon soy sauce
- 1/2 tablespoon black pepper
- 2 tablespoons vegetable oil
- 6 skewers
- 1/2 cup water
- Fresh salad, to serve
- Sliced cucumber, to serve
- Lime wedges, to serve
Method
Step One
First, take your pork shoulder and cut it into thin slice around 1/8 inch thickness. Make sure they are evenly cut so that they will cook evenly on the grill.
Step Two
Next, prepare your marinade. In a large mixing bowl, combine your finely chopped lemongrass, kinh gioi leaves, minced garlic, finely chopped red chili peppers, sugar, fish sauce, soy sauce, black pepper, and vegetable oil. Mix well until all ingredients are combined.
Step Three
Add the sliced pork to your marinade, ensuring all pieces are well coated. Cover the bowl and let it marinate in the fridge for at least an hour but for best results, leave it overnight.
Step Four
Once the pork has marinated, remove it from the fridge and let it come back to room temperature. Meanwhile, soak your skewers in water for around 30 minutes to prevent them from burning on the grill.
