What You’ll Need

  • 2 medium kohlrabis
  • 1 medium carrot
  • 1 medium apple
  • 1/2 medium red onion
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 1 tablespoon honey
  • Salt and black pepper, to taste
  • 4 cups shredded lettuce
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup chopped fresh mint

Method

Step One

Start by peeling the 2 medium sized kohlrabis and the 1 medium sized carrot. Once peeled, finely shred both the kohlrabis and the carrot.

Step Two

Next, finely chop the 1 medium apple and the 1/2 medium red onion.

Step Three

In a small bowl, mix the 1/4 cup of lime juice, 1/4 cup of olive oil, and 1 tablespoon of honey. Season with salt and black pepper to taste, and whisk until the mixture is well combined.

Step Four

In a large bowl, combine the shredded kohlrabis, shredded carrot, chopped apple, chopped onion, 4 cups of shredded lettuce, 1/2 cup of chopped fresh cilantro and 1/2 cup of chopped fresh mint.

Step Five

Pour the lime juice mixture over the vegetable mixture in the large bowl. Toss until all the ingredients are well coated.

Step Six

Allow the slaw to sit for at least 30 minutes before serving, to allow the flavours to meld together. The Kohlrabi Slaw is now ready to be enjoyed!
