What You’ll Need
- 3 tablespoons of Olive oil
- 2 medium-sized Onions, finely chopped
- 4 Cloves Garlic, minced
- 2 tablespoons of Ginger, minced
- 1 teaspoon of Korarima (Ethiopian Cardamom), ground
- 2 teaspoons of Cumin
- 2 teaspoons of Coriander
- 1/2 teaspoon of Cinnamon
- 1/2 teaspoon of Cayenne Pepper
- 2 large Carrots, peeled and thickly sliced
- 2 Zucchinis, thickly sliced
- 1 large Eggplant, cut into large chunks
- 1 Red Bell Pepper, cut into large chunks
- 2 cups of canned Chickpeas, drained
- 1/2 cup Dried Apricots, sliced
- 1/2 cup of Salted, roasted Almonds
- 4 cups of Vegetable broth
- 2 tablespoons of Honey
- 1 cup of Couscous
- 1/2 cup of Fresh Cilantro, chopped
- 1/2 cup of Fresh Mint, chopped
- 1 Lemon, juiced
Method
Step One
Start by heating the 3 tablespoons of olive oil in a large pan over medium heat. Once the oil is warmed, add the 2 finely chopped onions, 4 cloves of minced garlic, and 2 tablespoons of minced ginger. Sauté these ingredients until the onions become translucent and the garlic and ginger are fragrant.
Step Two
Stir in the ground Korarima, cumin, coriander, cinnamon, and cayenne pepper. Continue to sauté these ingredients with the onions, garlic, and ginger for a couple of minutes until you begin to smell the aroma of the spices.
