What You’ll Need
- 2 lb lamb meat, cut into chunks
- 1 tablespoon koseret leaves (dried)
- 2 onions, finely chopped
- 4 garlic cloves, minced
- 1 inch piece of ginger, minced
- 3 tablespoons Berbere spice mix
- 1 can (28oz) diced tomatoes
- 1 red bell pepper, diced
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 2 tablespoons vegetable oil
- 2 cups water
- 6 hard-boiled eggs, optional
- 1/2 cup plain yogurt, optional
- 1/4 cup fresh cilantro, chopped for garnish
Method
Step One
Heat 2 tablespoons of vegetable oil in a large stew pot over medium heat. Add the 2 lb of lamb chunks and brown them on all sides. Once browned, remove the lamb from the pot and set aside.
Step Two
In the same stew pot, add the 2 finely chopped onions and saute until they become translucent. Add the 4 minced cloves of garlic and 1 inch piece of minced ginger, and cook until their aroma releases.
Step Three
Add the 3 tablespoons of Berbere spice mix to the pot, stir to incorporate it with the onions, garlic, and ginger. Following this, reintroduce the browned lamb chunks to the pot and mix well to ensure that all pieces are evenly coated with the spices.
Step Four
Now pour in the 28oz can of diced tomatoes, together with their juice, along with 1 diced red bell pepper. Stir thoroughly to combine all the ingredients. Season the mixture with 1 teaspoon of salt and 1 teaspoon of ground black pepper.
Step Five
Lower the heat to low-medium, cover the pot and let the mixture simmer for about 15 minutes. Stir occasionally to prevent the ingredients from sticking to the bottom.
Step Six
After 15 minutes, add 2 cups of water and 1 tablespoon of koseret leaves to the pot. Stir well, cover, and let the curry cook for another 20-30 minutes, or until the lamb is tender and the flavors are well blended.
Step Seven
If you’re using hard-boiled eggs, peel and add them to the curry for the last 10 minutes of cooking to warm through and take on some of the curry flavors. Similarly, if you are using plain yogurt, swirl it into the curry for the last few minutes of cooking.
Step Eight
Adjust the seasoning with more salt or pepper if needed. Switch off the heat and let the curry rest for a few minutes before serving.
Step Nine
Serve your Koseret Flavoured Lamb Curry hot, garnished with fresh chopped cilantro. This curry pairs well with steamed rice or bread of your choice.
