What You’ll Need

  • 1 cup of fresh basil leaves, finely chopped
  • 1/2 cup of fresh parsley, finely chopped
  • 1 teaspoon of sea salt
  • 1/2 teaspoon of fresh ground black pepper
  • 1 teaspoon of sugar (optional)
  • 1/2 cup of grated Parmesan cheese
  • 1 pound of pasta (your choice)

Method

Step One

Begin by preparing your ingredients. This includes finely chopping the ripe tomatoes, peeling and dicing the Dragon Fruit, mincing the garlic, finely chopping the onion, finely chopping the fresh basil leaves, and finely chopped fresh parsley.

Step Two

In a large skillet or pan, heat the olive oil over medium heat. Add the minced garlic and the finely chopped onion into the pan and sauté until they become soft and fragrant.

Following this, add the diced Dragon Fruit to the pan and allow to cook until they soften. This should take around five minutes.

Reduce the heat to low and let the sauce simmer for about 25-30 minutes, stirring occasionally until the sauce thickens.

Step Six

While the sauce is simmering, cook the pasta according to the package directions. Once cooked, drain the pasta and set aside.

Step Seven

After the sauce has thickened, stir in the grated Parmesan cheese until well combined.

Step Eight
