What You’ll Need

  • 2 Kutjura (bush tomatoes)
  • Juice of 2 large lemons
  • 1 cup olive oil
  • 2 tablespoons honey
  • 1 crushed garlic clove
  • Salt and pepper to taste
  • 1 tablespoon Dijon mustard
  • 1 tablespoon chopped fresh basil leaves

Method

Step One

Begin by washing the Kutjura (bush tomatoes) under cool running water. Then chop them finely. Ensure they are as uniform as possible.

Step Two

Next, squeeze the juice out of the two large lemons. Make sure to remove any seeds that may get into the juice. Set the juice aside.

Step Three

In a large bowl, combine the finely chopped Kutjura, lemon juice, and 1 cup of olive oil. Stir the mixture well to fully incorporate all the ingredients.

Step Four

Add in the 2 tablespoons of honey to the mixture, blending well until it has fully dissolved. This will offer a subtle sweet touch to the dressing.
