What You’ll Need
- 1 lb Kutjura fruits (Bush Tomato)
- 2 lbs Fresh Tomatoes
- 1 large Onion, finely chopped
- 4 cloves of Garlic, minced
- 2 tablespoons Olive Oil
- 2 teaspoons White Sugar
- Fresh Basil Leaves, to taste
- 1 teaspoon Salt
- 1 teaspoon Ground Black Pepper
- 2 tablespoons Fresh Oregano, chopped
- 2 tablespoons Fresh Parsley, chopped
- 1 lb Pasta of choice
- Grated Parmesan Cheese, optional
Method
Step One
Begin by preparing all your ingredients. Clean the Kutjura fruits and fresh tomatoes, chop the onion, mince the garlic, chop the fresh oregano and parsley. Set these aside for later use.
Step Two
Heat the 2 tablespoons of olive oil in a large skillet over medium heat. Once the oil is hot, add the finely chopped onion and minced garlic. Sauté until the onion becomes soft and translucent.
Step Three
Add the Kutjura fruits to the skillet and cook for about 10 minutes, stirring frequently. After 10 minutes, add the fresh tomatoes and continue to cook, stirring occasionally until the tomatoes soften and form a sauce-like consistency.
Step Four
Stir in the white sugar, salt, and ground black pepper into the sauce. Mix well to ensure that the ingredients are evenly distributed.
Step Five
Add the chopped fresh oregano, parsley, and basil leaves, to taste, into the skillet. Stir the sauce well to mix in the herbs and reduce heat to low. Let the sauce simmer for about 15-20 minutes to allow the flavours to blend together. You can adjust the seasoning at this stage if necessary.
Step Six
While the sauce is simmering, cook the pasta of your choice according to the package instructions. Once the pasta is cooked, drain it thoroughly.
Step Seven
Add the cooked pasta to the sauce, and mix thoroughly until the pasta is evenly coated with the sauce. Continue to heat the pasta and sauce for an additional 2 minutes to ensure that the pasta absorbs the flavours of the sauce.
Step Eight
Take the skillet off the heat, and serve the pasta hot. You can sprinkle a generous amount of grated parmesan cheese on top of the pasta if desired. Enjoy your Kutjura and Tomato Pasta Sauce!
