There are many reasons why I adore the Kutjura Lentil Soup recipe. From its vibrant colors reminiscent of a Miami sunset to its unique juxtaposition of flavors, it’s a culinary adventure in a bowl. This fantastic soup, with origins Dutch down in the heart of Australia, expertly combines the sweetness of Kutjura with the comforting, nutty flavor of red lentils. Let’s not forget the dance of spices in your mouth, augmenting the natural flavors of the ingredients, enhancing the overall culinary experience.
A Fusion of Flavors
Living in Miami, the blend of cultures indeed influences my cooking. However, my Cuban and Spanish roots always shine, whether through a tropical cocktail or a traditional tapa. The complexity, yet harmony in Kutjura Lentil Soup always takes me back to those authentic Spanish stews simmering away in my Abuela’s kitchen. While far from being a Spanish classic, the rich, hearty character of this dish mirrors several stews from the Iberian Peninsula, such as the famous Spanish Lentil Soup.
Not Just Delicious, But Nutritious too
What I cherish the most about this recipe is that it’s not just gratifying to the palate but nourishing as well. Lentils are an excellent source of nutrients, packed with proteins, dietary fiber, and essential vitamins and minerals. Moreover, turmeric and cumin’s inclusion provides a boost of potent antioxidants and anti-inflammatory properties. And let’s not forget the Kutjura, a type of Australian bush tomato. Renowned for its high level of Vitamin C, this little fruit adds not just a sweet and tangy burst but also healthful benefits.
The beauty of the Kutjura Lentil Soup recipe lies in its versatility. It can be enjoyed on its own for a light lunch or served alongside some crusty bread or a fresh garden salad for a satisfying dinner. Furthermore, it’s quite similar to the traditional Spiced Vegan Lentil Soup, with the addition of the Kutjura giving it a distinctive Australian twist.
In essence, the Kutjura Lentil Soup isn’t just a recipe; it’s a symphony of tastes and health benefits. And that’s why I love it! From the heartiness of lentils and the tanginess of Kutjura to the rich tapestry of spices, it’s a dish that’ll have you going back for seconds, and even thirds!
What You’ll Need
- 1 cup dried red lentils
- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 2 cloves garlic, finely chopped
- 1 tablespoon ground cumin
- 1/2 tablespoon turmeric
- 1 tablespoon tomato paste
- 6 cups vegetable broth
- 1 cup Kutjura (Bush Tomato), fresh or dried
- 1 can (14 oz) diced tomatoes
- 2 large carrots, peeled and chopped
- 2 celery stalks, chopped
- Salt and pepper to taste
- Squeeze of lemon juice
- Handful of fresh coriander/cilantro, chopped
Method
Step One
Begin by rinsing the red lentils under cold water. Once cleaned, set aside.
Step Two
Heat the olive oil in a large pot over medium heat. Add in the finely chopped onion and garlic, sautéing until the onion becomes translucent. This should take around 5 minutes.
Step Three
Add in the ground cumin and turmeric to the sautéed onion and garlic. Stir well, cooking for about 2 minutes to allow the spices to release their flavors.
Step Four
Stir in the tomato paste until well combined with the ingredients.
Step Five
Pour in the vegetable broth, stirring to combine. Add the cleaned lentils, Kutjura (Bush Tomato), diced tomatoes, chopped carrots, and chopped celery. Stir the mixture well to combine all ingredients.
Step Six
Bring the soup to a boil. Once boiling, decrease the heat to low, cover the pot, and let simmer for about 25-30 minutes until the lentils and vegetables are tender.
Step Seven
Season your soup with salt and pepper to taste. Add a squeeze of lemon juice for a hit of acidity.
Step Eight
Just before serving, stir in the fresh chopped coriander/cilantro. Ladle your Kutjura Lentil Soup into bowls and serve hot. Enjoy your hearty and flavorful dish!
