The magic of this recipe lies not only in its enchanting palette but also in sensory experiences it evokes. Delightfully aromatic, lavender carries therapeutic properties, known for its calming effects, making this dessert an ideal treat to unwind after a busy day. The rich and creamy texture combined with the sweet, floral notes of lavender makes each bite feel like a gentle sea-breeze enveloping your senses. What I cherish about this recipe is not only its delightful taste, but also the joy it brings to my kitchen. And let’s not forget those vitamins and antioxidants lurking within those mixed berries – a vital element in maintaining good health.

Perfect Pairings

Though the ice cream is undoubtedly delicious on its own, why not class it up a bit? Try serving it alongside warm, buttery scones or crumbled shortbread to add a lovely contrast in textures. Or if you’re looking for similar fruit-based desserts, a refreshing fruit salad or a tangy raspberry dessert might pair wonderfully with this recipe, delivering a perfectly balanced sweet and tart combo.

So there you have it – a recipe that sprinkles summer magic irrespective of the season, lovingly wrapped in the innocent joy of homemade cooking. And as a salty breeze of the Atlantic that never fails to soothe, this Lavender Honey Ice Cream Recipe will certainly become a staple in your home, just as it has in mine.

What You’ll Need

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 2 tablespoons dried culinary lavender
  • 1/3 cup honey
  • 6 large egg yolks
  • 1 cup mixed berries (for serving)
ALLERGENS: milk, eggs

Method

Step One

Firstly, in a medium saucepan, combine the heavy cream, milk, sugar, and lavender. Over medium heat, stir the mixture until the sugar is dissolved.

Step Two

Once the sugar is dissolved, remove the saucepan from the heat and cover it. Allow it to steep for about 5 minutes. After 5 minutes, strain the mixture through a fine mesh sieve, discarding the lavender. Return the mixture back into the saucepan.

Step Three

Return the saucepan to the stove over medium heat and stir in the honey until it’s fully mixed in.

Step Four

In a different bowl, whisk the egg yolks. When the cream mixture is hot but not boiling, slowly pour about a third of it into the yolks, whisking constantly so that the eggs do not scramble. This is called tempering the eggs.

Step Five

Pour the tempered egg mixture back into the saucepan with the cream and continue cooking over medium heat, stirring often, until the mixture is thick enough to coat the back of a spoon.

Step Six

When finished, strain the mixture through the sieve again into a bowl. Place the bowl in an ice bath and stir it frequently until it cools down. Cover the bowl and place it in the refrigerator to chill for at least 2 hours or up to overnight.

Step Seven

Once thoroughly chilled, churn the mixture in an ice cream maker according to the manufacturer’s instructions. Serve the ice cream with a generous topping of mixed berries.
