What You’ll Need

  • 1 pound penne pasta
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 1 pound cremini mushrooms, sliced
  • 1/2 cup chopped leaf celery
  • 1 14.5-ounce can diced tomatoes
  • 1/2 cup vegetable broth
  • 1/4 cup dry white wine
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/4 cup chopped fresh basil
  • 1/2 cup grated Parmesan cheese

Method

Step One

Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the instructions on the package until al dente. Once cooked, drain and set aside.

Step Two

While your pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and finely chopped onion to the skillet. Saute these ingredients until the onion becomes translucent and the garlic is fraggy, which should take about 5 minutes.

Step Three

Add the sliced cremini mushrooms to the skillet. Continue to sauté until the mushrooms are browned and their moisture has been released. This will take around 8 minutes.

Into your simmering sauce, add 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and 1/2 teaspoon of dried oregano. Let the sauce simmer for approximately 10 minutes, which allows the flavors to meld together.
