What You’ll Need

  • 6 large eggs
  • 1 cup fresh leaf celery, finely chopped
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/3 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Method

Step one

Preheat your oven to 375 degrees F (190 degrees C). As it warms up, heat the olive oil in a large, oven-safe skillet over medium heat. Put in the onion, bell pepper, and minced garlic, sauté until they become tender and the onions are translucent.

Step two

Once the vegetables are cooked, add the fresh leaf celery and cherry tomatoes to the skillet. Stir all the ingredients to mix them properly. Let it cook for another 2-3 minutes or until the celery starts to wilt slightly.

Step three

In a separate bowl, start beating the eggs. Add in the salt, black pepper, shredded mozzarella cheese, and grated Parmesan cheese. Mix them until all the ingredients are fully combined.

Step four

Pour the egg mixture into the skillet over the cooked vegetables. Mix them lightly to ensure the vegetables are evenly distributed. Allow the frittata to cook undisturbed on medium heat until the edges of the frittata start to set.

Step five

Transfer the skillet to the preheated oven. Bake the frittata for 10-15 minutes, or until it’s fully set and the cheese is melted and slightly browned.

Step six
