Why I Love Austrian Lemon Herb Marinated Sea Bass

When I first came across this stunning Austrian dish, I was instantly intrigued by its deceptively straightforward blend of herbs, lemon, and succulent sea bass fillets.

Lemon Herb Marinated Sea Bass

Of Homelands and Fusion

It’s no secret that my cooking is always infused with the flavors of my Afro-Southern roots. But every once in a while, like a chef that wanders into a new neighborhood market, I stumble upon a dish from another global cuisine that challenges and expands my culinary horizons. It’s a delightful reminder that we can travel the world without leaving our kitchens.

I don’t recall any specific chef as an inspiration for me to explore this recipe. However, I do appreciate the work of Wolfgang Puck, the renowned Austrian-born chef who successfully combines various culinary cultures in his recipes.

Herbs, Lemon, and Sea Bass: a Symphony of Flavors

The brilliance of this sea bass recipe lies in its simplicity: the velvety sea bass marinated perfectly in a blend of aromatic herbs, piquant lemon juice, and the warm richness of olive oil. Add a touch of honey and the relentless kick of minced garlic, and you have an ocean-saluteing delicacy that brings together the bright and the hearty in every bite.

For a minute, the combination of herbs and citrus took me back to the Senegalese Fish Yassa which is mildly similar with its lemony garlic sauce, but maintains its own distinct personality. If you ever decide to give this dish a go, it goes wonderfully with roasted vegetables, or to keep it within the family of its Austrian roots, a side of German-style Red Cabbage.

From my home in Atlanta to a far-flung Austrian kitchen, this Lemon Herb Marinated Sea Bass recipe adds another thread to the tapestry of my cooking, a practice that’s always a bit Southern, a little bit Nigerian, and always passionately global.

What You’ll Need

  • 6 sea bass fillets (about 4 ounces each)
  • Juice and zest of 3 large lemons
  • 6 cloves garlic, minced
  • 1/2 cup olive oil
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon honey
  • Lemon slices for garnish
  • Fresh herbs for garnish
ALLERGENS: Fish

Method

Step One

Combine the juice and zest of 3 large lemons, the minced garlic, olive oil, chopped fresh thyme, rosemary, parsley, salt, black pepper, and honey into a bowl. Stir it all together well until the mixture is uniform.

Step Two

Place your sea bass fillets into a large dish. Pour your lemon herb marinade over the fish. Make sure every part of each fillet is well coated in the marinade.

Step Three

Cover the dish with plastic wrap and let the fish marinate in the refrigerator for at least two hours. If you have the time, letting them marinate overnight will allow for a more intense flavor.

Step Four

When you are ready to cook, preheat your grill or preheat the oven to 400 degrees Fahrenheit.

Step Five

Remove the sea bass fillets from the marinade. If you are grilling the fish, proceed to place them onto the hot grill. If your chosen method is the oven, line a baking tray with foil and arrange the fillets on the tray.

Step Six

Cook the sea bass fillets until they are opaque throughout, which should take about 10 – 12 minutes depending on thickness. If using, the grill, be sure to turn them halfway through for even cooking.

Step Seven

Serve the sea bass fillets immediately with extra lemon slices and fresh herbs as garnish. Enjoy your Lemon Herb Marinated Sea Bass!
