What You’ll Need
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 2 tablespoons lemon myrtle, ground
- 1 red chili, deseeded and finely chopped
- 1 lb spaghetti pasta
- 2 lemons, zested and juiced
- 1/2 cup grated Parmesan cheese
- 1/2 cup fresh parsley, chopped
- Salt, to taste
- Black pepper, to taste
Method
Step One
Heat the olive oil in a large frying pan over medium heat. Add the minced garlic and fry it gently until it becomes fragrant and lightly colored.
Step Two
Add in the ground lemon myrtle and finely chopped red chili to the pan. Stir it in with the garlic and let it cook for a couple of minutes to release their flavors.
Step Three
In a large pot of salted boiling water, cook the spaghetti pasta according to packet’s instructions until it is al dente. Once done, keep aside a cup of the pasta water and then drain the pasta.
Step Four
Add the drained pasta to the frying pan with the garlic, lemon myrtle, and chili. Toss it well to make sure the pasta is well coated with the oil and spices.
Step Five
Add the lemon zest and juice to the pasta. Stir it well to combine before adding in the grated Parmesan cheese. If the pasta looks dry, add in some of the saved pasta water.
Step Six
Season the pasta with salt and black pepper to taste, and then stir in the chopped fresh parsley. Give everything one final toss to combine before serving.
Step Seven
Plate the Lemon Myrtle and Chili Pasta. You could garnish with some more parmesan cheese and fresh parsley if desired. Enjoy!
