One of my favourite drinks to quench thirst and offer a breezy alternative to hot tea is the Lemongrass, Mint, and Lime Iced Tea. Inspired by my Pacific Northwest upbringing and my frequent travels to Japan, I’ve fallen in love with the simplicity yet complexity of this refreshing blend.

What You’ll Need

  • 6 cups of water
  • 3 stalks of lemongrass
  • 1 cup of fresh mint leaves
  • 1/2 cup of lime juice
  • 1 cup of sugar
  • 1/2 cup of honey
  • 6 cups of ice
  • 6 lime slices for garnish (optional)
  • Mint sprigs for garnish (optional)

Method

Step One

Begin by bringing the six cups of water to a boil in a large pot. Once boiling, add the three stalks of lemongrass and let it steep for about 10 minutes.

Step Two

While your lemongrass is steeping, rinse the fresh mint leaves under cold water. After rinsing, add the mint to the pot with the lemongrass.

Step Three

Stir in half a cup of lime juice, one cup of sugar, and half a cup of honey into the pot. Continue stirring until the sugar fully dissolves.

Step Four

After the sugar has dissolved, remove your pot from heat and let your mixture cool to room temperature. Once cool, remove the lemongrass stalks and the mint leaves from the pot.

Step Five

Once your tea mixture is cool, pour into a pitcher over six cups of ice, stirring well to ensure the flavors are thoroughly mixed.

Step Six

Serve your refreshing iced tea in glasses. If desired, garnish each glass with a slice of lime and a sprig of mint for a beautiful presentation and an added flavor pop. Enjoy!
