One of my favorite dishes to make has to be the Lemongrass Tea-Infused Rice. This recipe combines some of my favorite ingredients to create a delightful and unique dish. The earthy aroma from the lemongrass and the subtle sweetness from the jasmine rice remind me of my grandparents’ farm where I learned to appreciate the art of good food. What You’ll Need

  • 6 Cups of water
  • 3 Stalks of fresh lemongrass
  • 2 Cups of Jasmine rice
  • 2 Tea bags (Green tea)
  • 1 Tablespoon of sugar
  • 1/2 teaspoon of salt
  • 1 Fresh lime
  • 2 Tablespoons of Unsalted butter
  • Chopped fresh fruits: 1/2 Cup each of strawberries, blueberries, and kiwis
  • 1/4 Cup of shredded coconut
  • 1/4 Cup of Fresh mint leaves
ALLERGENS: Jasmine rice, Green tea, Unsalted butter, strawberries, blueberries, kiwis, shredded coconut

Method

Step One

Begin by lightly pounding the lemongrass stalks to release the fragrance, and then roughly chop them up. In a saucepan, combine the lemongrass with the water. Bring the mixture to a boil, and then let it simmer for around 10 minutes.

Step Two

Afterward, add your tea bags to the saucepan and steep for about 5 minutes. Once the tea is steeped, remove the tea bags and the lemongrass from the saucepan with a slotted spoon, ensuring as much liquid stays in the saucepan as possible.

Step Three

Next, add your rice, sugar, and salt to the tea-infused water. Bring the mixture back to a simmer, and then reduce the heat to low. Cover the saucepan and let the rice cook, undisturbed, for about 15-20 minutes or until the rice is fully cooked and there’s no water left in the saucepan.

Step Four

While the rice is cooking, you can prepare your fruits. Clean and chop your strawberries, kiwis, and blueberries, and set them aside.

Step Five

Once the rice is finished, remove from heat and add your butter. Stir well until the butter is fully melted and incorporated into the rice. Then, zest your lime and then squeeze the juice into the pot. Mix everything together thoroughly.

Step Six

The final step is the garnishes. Place your cooked rice into serving bowls, top with the chopped fruits, shredded coconut, and mint leaves. For an extra zing, you can add more of the fresh lime juice on top. Enjoy your Lemongrass Tea-Infused Rice!
