What You’ll Need
- 1 cup green lentils
- 2 cups water
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup mushrooms, finely chopped
- 1 red bell pepper, finely chopped
- 1 cup breadcrumbs
- 1/2 cup flour
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 2 teaspoons paprika
- 1/4 teaspoon salt

Method
Step One
Start by boiling the green lentils: take a large pot, add 1 cup of green lentils and 2 cups of water. Bring the water to a boil, then lower the heat and let it simmer until the lentils are tender, this should take about 20-30 minutes.
Step Two
While waiting for the lentils to cook, heat 2 tablespoons of olive oil in a skillet over medium heat. Add the finely chopped onion to the skillet and sauté until it becomes soft and translucent.
