What You’ll Need

  • 6 sea bass fillets
  • 2 tablespoons less calamint leaves, finely chopped
  • 1 lemon, zested and juiced
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 6 sprigs of fresh thyme
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 3 tablespoons white wine
ALLERGENS: Fish, Garlic, Butter

Method

Step One

Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Prepare a baking sheet by lining it with aluminum foil for easy cleanup.

Step Two

In a small bowl, combine finely chopped lesser calamint leaves, minced garlic, lemon zest, lemon juice, and olive oil. Whisk these ingredients together until well mixed.

Step Three

Season both sides of the sea bass fillets generously with salt and pepper. Transfer the fillets to the prepared baking sheet.

Step Four

Using a brush or spoon, evenly distribute the calamint mixture on both sides of the fillets. Place a sprig of fresh thyme on each of the fillets. Dot each fillet with some butter.

Step Five

Roast the sea bass in the preheated oven for approximately 15-20 minutes, or until the fish flakes easily with a fork. Baking times may vary depending on the thickness of the fillets.

Step Six

About 5 minutes before the fish is done, remove the baking sheet from the oven and drizzle the white wine over the fillets. Return the baking sheet to the oven to finish cooking.

Step Seven

Once the fish is done, remove it from the oven. Serve it hot, garnished with extra calamint leaves and lemon slices if desired, and enjoy your Lesser Calamint Infused Roasted Sea Bass right away.
