What You’ll Need

  • 1 whole duck (around 5 pounds)
  • 2 tablespoons of finely chopped fennel bulb
  • 2 teaspoons of licorice root powder
  • 1/2 cup of fresh squeezed orange juice
  • 1/4 cup of honey
  • 4 cloves garlic, minced
  • 1 teaspoon of orange zest
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 3 fennel stalks, cut into 4-inch pieces
  • 2 apples, quartered
  • 1 orange, cut into segments

Method

Step One

Preheat your oven to 375°F (190°C). Meanwhile, pat the duck dry using a paper towel, making sure to also dry the inside of the cavity.

Step Two

In a small bowl, thoroughly mix the finely chopped fennel bulb, licorice root powder, orange zest, salt, and black pepper. Rub this mixture all over the duck, including inside the cavity.

Step Three

In another bowl, combine the fresh squeezed orange juice, honey, and minced garlic. Baste the outside of the duck with this mixture.

Step Four

Stuff the duck’s cavity with the quartered apples, fennel stalks, and orange segments. This will infuse the duck with additional flavor as it cooks.

Step Five

Place the duck on a rack in a roasting pan, breast side up. Place the pan in the preheated oven and roast for 1.5 hours, or until the internal temperature reaches 165°F (74°C) when a meat thermometer is inserted into the thickest part of the thigh.

Step Six
