What You’ll Need

  • 1 and 1/2 cups graham cracker crumbs
  • 1/3 cup melted unsalted butter
  • 1/4 cup granulated sugar
  • 3 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 3 tablespoons all-purpose flour
  • 1 teaspoon pure vanilla extract
  • Zest and juice of 3 limes
  • 1 cup whipped cream for topping

Method

Step One

Preheat your oven to 350 degrees F (175 degrees C). In a medium bowl, mix together graham cracker crumbs, melted butter, and 1/4 cup sugar. Press this mixture into the bottom of a 9-inch springform pan to form the crust.

Step Two

In a large mixing bowl, beat the softened cream cheese until smooth. Gradually blend in 1 cup sugar. Beat in the eggs one at a time, making sure each egg is fully incorporated before adding the next. Blend in the sour cream, flour, vanilla extract, and the zest and juice of the limes. Pour this mixture over the crust in the springform pan.

Step Three

Place the pan into the oven and bake for 50 to 60 minutes, or until the cheesecake is set and lightly browned on top. Keep an eye on it to prevent overcooking. The center should still have a slight wobble to it—this is a sign that it’s done.

Step Four

Allow the cheesecake to cool in the pan on a wire rack for at least 10 minutes, then run a knife around the edge to loosen it. Leave the cheesecake in the pan and place it in the refrigerator to chill for at least 4 hours, or overnight if possible.

Step Five
