What You’ll Need

  • 2 pounds of carrots, peeled and halved lengthwise
  • 1/4 cup honey
  • 2 tablespoons olive oil
  • 2 long peppers, finely chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • 1/2 cup fresh parsley, chopped

Method

Step One

Preheat your oven to 425 degrees. Arrange your peeled and halved carrots on a baking sheet.
