Why I Love Canadian Louis Ribs
On my first visit to Canada, I crossed paths with the renowned Louis Ribs – a mouthwatering delicacy and an absolute gem in Canadian cuisine. The allure of these richly seasoned and well-broiled ribs has remained embedded in my palate, inspiring me to develop my own version of this immortal dish.

A Culinary Journey
My culinary journey has largely danced between Caribbean flavors and traditional Spanish classics, but fitting this delectable Canadian staple into my gourmet repertoire was a fascinating and flavorful twist. While it might seem like this is off the beaten path for me, there is something inherently universal about the allure of well-cooked ribs that transcends any culinary boundary.
Inspired by chefs like Jamie Oliver, I’ve curated my version of Louis Ribs to be the perfect balance of sweet, spicy, and smoky, delineating the notes of each spice without overpowering the succulent taste of pork ribs.
Seamless Fusion
Just like a well-choreographed dance, the harmony between the ingredients is what makes this recipe truly special. The symphony of brown sugar and paprika, enhanced with chili, onion, and garlic powder, leads to an explosion of flavor swaying to a spicy samba, calming down with the sweet twirls of the barbecue sauce.
The versatile flavors and textures of Louis Ribs harmonize beautifully with the simplicity of a side of Roasted Sweet Potato Fries, or the freshness of a Chopped Greek Salad. Similarly, the smoky-sweet profile of the ribs makes them an ideal companion to a tropical cocktail, adding an interesting juxtaposition of flavors.
Decoding Louis Ribs has been more than just a process of cooking; it was a journey of fine-tuning the medley of flavors, diversifying my culinary landscape beyond Caribbean and Spanish cuisines. It’s a testament to the fact that good food, no matter where it comes from, can always find its way to our hearts….and our kitchen!

Step One:
Start by preheating the oven to 275 degrees. While you’re waiting for the oven to warm up, get a large baking sheet and place the St. Louis-style pork ribs onto it.
Step Two:
Evenly drizzle olive oil all over the ribs, making sure it’s well covered. This will help to lock in the juiciness of the ribs as they cook.
Step Three:
In a bowl, combine the brown sugar, paprika, black pepper, salt, chili powder, garlic powder, onion powder, and cayenne pepper. Stir them all together until it becomes a consistent mixture.
Step Four:
Next, rub this mixture onto the ribs, and make sure to cover all the sides. Let the ribs sit for a bit so that the seasoning can really sink in.
Step Five:
After you’ve let the ribs sit, put them into the oven and let them roast for approximately 2.5 to 3 hours. You want them to be tender but not falling off the bone.
Step Six:
Once done, take them out of the oven and generously brush on the barbecue sauce. Then, put them back into the oven and leave for about 30 more minutes or until the sauce is bubbling and sticky.
Step Seven:
At last, take the ribs out of the oven and give them a moment to cool down a bit. Slice them up and serve for a delicious treat! Enjoy your St. Louis Ribs.
