What You’ll Need

  • 1 cup of lychees, peeled and pitted
  • 2 cups of lychee juice
  • 1 cup of water
  • 1 cup of sugar
  • 1/4 cup of gelatin powder
  • 1 tablespoon of lemon juice
  • 1 cup of strawberries, sliced
  • 1/2 cup of raspberries

Method

Step One

First, make sure that your lychees are all peeled and pitted. Add them in a blender along with the 2 cups of lychee juice. Blend until smooth.

Step Two

In a saucepan, combine 1 cup of water and 1 cup of sugar. Heat the mixture over medium heat until the sugar is completely dissolved. This will create a syrup.

Step Three

Next, mix in the gelatin powder to the sugar syrup. Stir until the gelatin is thoroughly dissolved. This could take about 3-5 minutes. Make sure the mixture does not come to a boil.

Step Four

Combine the lychee-juice mixture with the sugar-gelatin mixture. Stir well. Add in the tablespoon of lemon juice.

Step Five

Pour the whole mixture into a jelly mould or into individual serving cups. Allow it to cool slightly before placing it in the refrigerator. Chill for at least 4 hours, or until set.

Step Six

When serving, top each jelly dessert with slices of strawberries and a handful of raspberries for a fresh, fruity flavour burst.
