Why I Love French Lyon Sausage
Whenever I think of comfort food with a sophisticated touch, my mind instantly drifts to the rich flavors of French cuisine and my own recipe for Lyon Sausage. There’s something truly heartwarming about this distinctive and flavorful French sausage. It takes me back to my childhood in the sunny valleys of California where my family loved hosting barbecues; only this time, with the refined finish of West Coast health-consciousness interspersed with the recipe.
Discovering a Gourmet Delight
Being a food aficionado, I venture to explore different blends of tastes that can be combined to create a tantalizing recipe. It was in this pursuit that I chanced upon chef Paul Bocuse, famous for his innovative approach to French cuisine. The way he mixed tradition with taste was an inspiration, which profoundly reflected in my venture to perfect the Lyon Sausage recipe.
By bringing together quintessential ingredients like pork shoulder, nutmeg, and red wine, this recipe encapsulates a rich blend of unique flavors, derived from its age-old origin in Lyon, a city known for its food culture in France.
Perfect Pairings
The robust character of the Lyon Sausage makes it a versatile addition to numerous dishes. It’s sublime when paired with a warm baguette and coarse French mustard – a combination that takes me right back to street-side cafes in Lyon. A traditional Lyonnaise potato salad or hefty cassoulet also works spectacularly well as a companion to this sausage. Its flavor-filled and full-bodied nature stand up to hearty, robust dishes, yet it’s decedent enough to stand alone as a centerpiece.
As a mother to three wonderful, food-loving children, I adore preparing and sharing meals that not only satiate their palates but also weave a story of different cuisines around the globe. And the Lyon Sausage, with its simple yet explosive flavors, is one recipe that we all enjoy as a family, adding our own little traditions and memories to this classic French fare.
Indeed, whether you’re looking to spruce up your regular meals or want to create a memorable dish that will leave your guests asking for more, the Lyon Sausage recipe is a must-try. Its simpicity, delicious taste, and uniqueness will take you on a culinary journey worth venturing into.
What You’ll Need
- 2 pounds of pork shoulder
- 1/2 pound of pork fat
- 1 tablespoon of salt
- 1 teaspoon of ground black pepper
- 1 teaspoon of ground nutmeg
- 4 cloves of garlic, minced
- 1/4 cup of red wine
- 1/4 teaspoon of curing salt
- 10 feet of hog casings
Method
Step One
Chop the 2 pounds of pork shoulder and 1/2 pound of pork fat into small pieces. Make sure they are small enough to fit into your meat grinder.
Step Two
Place the chopped pork and fat in a large bowl. Add the 1 tablespoon of salt, 1 teaspoon of ground black pepper, 1 teaspoon of ground nutmeg, and minced garlic. Mix well to ensure all pieces are evenly coated.
Step Three
Pour in the 1/4 cup of red wine, ensuring it gets across all the meat. Add the 1/4 teaspoon of curing salt and mix well.
Step Four
Cover the bowl and refrigerate for about an hour. This allows the flavors to thoroughly permeate the meat.
Step Five
While the meat is chilling, prepare your hog casings. Rinse the 10 feet of hog casings well in warm water.
Step Six
Grind the chilled meat and spice mixture through the coarse plate of your meat grinder into a large bowl.
Step Seven
Stuff the ground meat mixture into the hog casings. Be careful not to overstuff.
Step Eight
Twist the sausages into links at your desired length.
Step Nine
Allow the sausages to cure in the refrigerator for 2 days before cooking or freezing. This will allow the flavors to meld together.
