What You’ll Need

  • 4 cups fresh sweet corn kernels
  • 2 ripe tomatoes, diced

  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 carrots, chopped
  • 1 stalk celery, chopped
  • 1 chili pepper, chopped (optional)
  • 6 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, finely chopped
  • 1 avocado, sliced for garnish

Method

Step One

Start by preparing your vegetables. Clean and chop the onion, bell pepper, carrots, and celery stalk. If you prefer a bit of spice, chop the chili pepper as well. Lastly, dice the tomatoes and mince the garlic cloves.

Step Two

In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onions become translucent and fragrant.

Step Three

Next, incorporate the rest of the veggies to the pot – chopped red bell pepper, carrots, and celery stalk. Sauté for another 5 minutes, until they start to soften.

Step Four

Add the diced tomatoes, corn kernels, and chopped chili pepper to the pot, stirring well to combine all the ingredients.

Step Five

Pour the vegetable broth into the pot. Add the salt and black pepper. Stir the soup and bring it to a boil.

Step Six

Reduce the heat to low, cover the pot, and let the soup simmer for about 30 minutes, or until all the vegetables are tender.

Step Seven

A few minutes before serving the soup, stir in the chopped fresh parsley for a bright, herby flavor.

Step Eight
