What You’ll Need

  • 1 cup uncooked wild rice
  • 2 cups of water
  • 1 tablespoon of vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chopped red bell pepper
  • 1 cup chopped green bell pepper
  • 2 cups fresh spinach, chopped
  • 2 cups Manchurian sauce
  • 1 cup raisins
  • 2 apples, peeled and chopped
  • 1 cup freshly squeezed orange juice
  • 1/2 cup grated cheddar cheese
  • 1/2 cup grated mozzarella cheese
  • Salt to taste
  • Black pepper to taste
ALLERGENS: Wild rice, vegetable oil, garlic, Manchurian sauce, cheddar cheese, mozzarella cheese

Method

Step One

Combine 1 cup of uncooked wild rice with 2 cups of water in a medium-sized pot. Place the pot over medium heat, and allow the wild rice to cook until it is tender. This should take approximately 45 minutes to an hour. After cooking, drain the excess water and set the rice aside.

Step Two

While your rice is cooking, heat 1 tablespoon of vegetable oil in a separate skillet over medium heat. Once heated, add the chopped onion and minced garlic into the skillet. Cook until the onion becomes clear and the garlic is fraggerant, stirring occasionally. This should take about 5 minutes.

Step Three

Next, add the chopped red and green bell peppers to the onion and garlic mixture in the skillet. Continue cooking for another 5 to 7 minutes, or until the peppers are tender.

Step Four

To the skillet, add the 2 cups of chopped fresh spinach, stirring until it is wilted down. Following this, pour in the 2 cups of Manchurian sauce. Allow the mixture to simmer for about 10 minutes.

Step Five

In the meantime, chop the apples and squeeze fresh orange to make 1 cup of orange juice. Once the skillet mixture has simmered, stir in the cooked wild rice along with the raisins, chopped apples, and orange juice. Season with salt and black pepper to taste. Mix well.

Step Six

Transfer the mixture from the skillet into a baking dish. Sprinkle the top evenly with the grated cheddar and mozzarella cheeses.

Step Seven

Place the baking dish into a preheated oven, set at 350 degrees Fahrenheit. Bake for 20 to 25 minutes, or until the cheese is melted and lightly browned.

Once finished, take it out of the oven, let it cool for a few minutes and serve your Manchurian Wild Rice Casserole with Cheese and Spinach while warm.
