What You’ll Need

  • 2 cups Manchurian wild rice
  • 4 cups water
  • 2 large chicken breasts, boneless and skinless
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cups fresh broccoli florets
  • 1/2 cup orange juice
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 cup diced fresh pineapple
  • 1 cup diced fresh mango
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 green onions, sliced

Method

Step One

Begin by rinsing the Manchurian wild rice under cold water. Next, in a large saucepan, combine the rinsed rice with 4 cups of water. Bring this mixture to a boil, then reduce it to a simmer, cover, and let it cook until the rice is tender and has absorbed all the water. This should take about 50-55 minutes.

Step Two

While the rice is cooking, you can prepare the chicken. Take the boneless and skinless chicken breasts and season them with salt and black pepper. Then heat the olive oil in a large skillet over medium heat. Place the chicken in the skillet and cook it until it’s golden brown on both sides and cooked through. Once done, remove the chicken from the skillet and set it aside.

Step Three

In the same skillet, add the broccoli florets and stir-fry them for a few minutes until they become bright green and crisp-tender. Once done, remove the broccoli from the skillet and set it aside with the chicken.

Step Four

Next, in the same skillet, add the orange juice, soy sauce, honey, diced pineapple, diced mango, minced garlic, grated ginger, and red pepper flakes if using. Stir everything together and bring the sauce to a simmer. Let it simmer for a few minutes until it thickens slightly.

Step Five

Cut the cooked chicken into slices or chunks and return it to the skillet with the sauce. Also add back in the cooked broccoli. Mix everything together until the chicken and broccoli are well coated in the sauce. Let everything heat through for a couple of minutes.

Step Six
