What You’ll Need

  • 1 cup all-purpose flour
  • 1/2 cup of lukewarm water

  • 2 eggs
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 1/4 cup of melted butter
  • 1/2 cup of sliced almonds
  • 1 cup of whipped cream (optional)
ALLERGENS: Wheat (in all-purpose flour), Sesame (in sesame oil), Eggs, Milk (in melted butter and whipped cream), Tree nuts (in almonds)

Method

Step One

Begin by sifting together flour, baking powder, baking soda, and salt in a large mixing bowl.

Step Two

In a separate bowl, whisk the eggs and granulated sugar until lightened in color. Stir in the mandarin zest and juice. Slowly add in the lukewarm water.

Step Three

Slowly add the wet ingredients into the dry ingredients stirring only until just combined. It’s okay if there are a few lumps. It is important not to over mix the batter as it may create tough pancakes.

Step Four

Add the melted butter to the batter followed by the sliced almonds, again mixing only until just combined.

Step Five

Heat a griddle or non-stick frying pan over medium heat and brush with sesame oil. Once heated, pour 1/4 cup of batter on the griddle for each pancake.
